Ok, who beside me stuffed themselves this Thanksgiving?  Leftovers?  Sure, we typically have them.  I don’t know about you, but I think I’ve had Thanksgiving leftovers every night since Thanksgiving Day. 

Many of us are okay with reheating and eating the food as it was served, while others may be getting in touch with their creative side and are looking for ways to jazz up the traditional holiday dishes.

Here is a simple idea for a great turkey casserole…

Grease an 8 by 8 pan, add a thin layer of stuffing and turkey.  Add a little mayo to the turkey to keep it moise.  Add a layer of cranberries, mashed potatoes, add a little cheddar cheese on top and bake at 375 for about 40 minutes.

Another idea includes leftover turkey and stuffing.

Mix a little bit of cream of mushroom soup and some sour cream. Pour that over your turkey and do your stuffing on top.  Bake it at 350 for about 45 to 50 minutes.

When it comes to storing your leftovers, it is best to get them out of the fridge within five to six days, and out of the freezer within a month to six weeks.

You don’t really want to push more than that because the food can start building up mold. Not necessarily right away, but you can get sick if you have it in there more than five to six days at a time after it’s been cooked.

If you are not in the mood to use the oven for a while after Thanksgiving, here’s another simple idea. One of my favorites is a hot turkey sandwich on white bread with gravy and mashed potatoes.  Bon Appetit!
