Vegan Recipes for the First Day of Summer

Friday, June 21 marks the first official day of summer this year. And, with the official summer season fast approaching, summertime delicacies will soon be seen--meaning, a lot of food on the grill. Hamburgers, hot dogs and steaks, oh my. What's a vegan to do at a picnic where the main food group is meat? Salads. Many, many different kinds of salads. And, no, I'm not talking about the traditional lettuce salad. I'm talking about bean salads, cucumber salads and tomato salads--just to name a few. Zach Names New Cat After John Lennon Song [VIDEO]

After vowing never to get another cat because of the heartbreak experienced when my cat of 18 years died, I am now a new cat owner. Yes, I spent many years grumbling that I never wanted another cat. But, this cat's circumstances were dire, and he needed a place to live. So, to make a long story short, I said, "Yes." Because of the circumstances, we didn't have a lot of time to prepare--so, we were racking our brains to find a cool name for our new pal. And, after a solid day of trying to figure out a name, one popped into my brain. My cat now has the name "Instant Karma," after the 1970 John Lennon hit.

Vegan with a Green Thumb–Zach’s Garden [PHOTOS]

Being a vegan means my diet consists of fruits and vegetables. So, you would think it would be like second nature for me to be a successful gardener. Last year was my first attempt at gardening, and my garden was OK. Nothing spectacular. This year, I decided to try something different. I built a mini greenhouse (cold frame) on my raised garden bed. My vegetable plants have been growing like crazy.

May is National Photography Month

May is not only a month to dust off the grill and start planting flowers, it's a month to get out there and take some photos. May is National Photography Month. Let me start out by saying that I'm a novice photographer with a few tricks I've learned along the way. I wouldn't consider myself a professional photographer. Did You Know it’s National Park Week?

That's right. This week is a time to celebrate our national parks as part of National Park Week from April 20-28, 2013. Here's something that I learned while researching National Park Week--there are 401 national parks, according to the National Park Service website. That's pretty amazing. Zach’s Car Reaches Milestone

On a cold, 36 degree, spring morning, my car reached a milestone, which usually only happens once in a car's lifetime. My car's mileage has reached 123,456. Not only am I happy that I caught the moment right when it happened (I had to pullover and take the picture), I'm extremely happy my Toyota has lasted so long.

Vegan Food from Around the World – Culture Fest: A Festival of Nations

Finding food in America that is 100 percent vegan can be a bit of a challenge. There's a lot of looking at labels to make sure there is no hidden dairy, meat, eggs or fish in the food. I've been a vegan for well over 5 years, so, I have become somewhat of an expert at finding food that is vegan. In some places around the world, people eat an almost fully vegetarian diet. And, it's this food from these places around the world that don't eat meat that tends to be my favorite.

Local Summer Farmers Market Takes Root at New Location; Begins in May

I am a huge fan of farmers markets. I have been to many farmers markets stretching from Utica to Rochester, and everywhere in between. It's always a good day when there is time to stop at a farmers market. And, speaking of a good time to go to a farmers market--mark your calendars for Sunday, May 19  because that's when the Westmorland Summer Farmers Market begins, according to the market's Facebook page. In addition, the market will be at a new location this year.
